How does a Meat Maturing Bags work?

The meat is easily vacuumed with any LAVA vacuum sealer and the Umai Style Dry Aging Bag. A LAVA A-Vac meat maturing bag has very thin membrane layers. They are airtight on the outside to protect the meat from any cross-contamination in the fridgeOn the other hand, the dry aging bags are permeable to water vapour from the inside out. Very similar to a breathable Gore-Tex fabric membrane. Therefore, it’s possible for the meat to mature via a biochemical process. To do this, you must not move the vacuumed meat, which matures in the refrigerator for up to four weeks. The cold chain should be interrupted as little as possible.

Be Aware of Weight loss

In a maturing bag, the meat loses about 20% of its weight. This happens because the moisture of the meat evaporates through the membrane layer. The advantage of maturing in the maturing bag, in addition to the financial aspect, is also the preservation and concentration of the meat aroma.
